Most pizza shops start with a pizza guy. HEMI started with seafood chefs — and that’s exactly why it tastes the way it does.

Born inside a seafood kitchen

HEMI Pizza was built inside Chef Tony’s Fresh Seafood in Rockville, MD, part of the Chef Life Food Group. When your day job is sourcing fresh fish and Maryland lump crab, you develop a certain obsession with where ingredients come from and how they’re handled. We pointed that same discipline at pizza.

Why Detroit-style

We didn’t want to make another round cheese pizza. Detroit-style gave us a canvas: an airy, black-steel-baked crust with crispy caramelized edges that could carry serious, chef-driven toppings without collapsing. It’s a format built for people who actually care about what’s on their pizza. Here’s the full case for the style →

We call it adult-level pizza. Real ingredients, bold combinations, no apologies.

Adult-level pizza

That phrase is the whole philosophy. Six-hour braised short rib. Maryland lump crab with a creamy crab sauce. Ezzo cupping pepperoni that curls and chars. Grande and Wisconsin brick cheese. Fresh herbs and a house-built three-tomato sauce. It’s pizza sourced like a chef would, not like a chain.

The name

HEMI — like the engine. Muscle, power, and a little swagger. You’ll see it in the racing stripes of sauce across every pie and the black-and-red look of everything we make. It even spun off its own cult product: HEMI Hot Honey.
